Having served as "Monsieur Paul's" right-hand man and devoted disciple for over 25 years, this humble and passionate Meilleur Ouvrier de France (MOF) draws on both the terroir and memories of the late great Bocuse to compose a symphony of excellent dishes that have established this legendary institution as an integral part of the international international gourmet heritage.
Chef, what's your day like in this gourmet temple?
I wake up at 6.30 am. After breakfast at home, I'm in the kitchen by 7.30 am. I turn on the lights and read my newspaper, as Chef Olivier Couvin (MOF) and the teams gradually arrive and we have coffee, involving a short briefing session and ten-minute chat before everyone goes about their business. I manage the schedules and take part in a debrief on the previous day. Afterwards, I often lend a hand in preparing the fish (albeit with a few interruptions from the secretariat for menus, book signings, interviews...). At 10.45 am the kitchen is cleaned up, and at 11 the 90 restaurant staff sit down for a 30 minute meal. After that, the dining room teams bring me the lunch or dinner schedule. Were lucky enough to have an opening onto the entrance, so I can see the customers coming in, bearing in mind that I always pass through the dining room to greet our guests. Around 3 pm, things come to a halt and after a short break we're back again at about 5 pm for the evening meal.

Yes, it's a story of passion: I'm a Porsche ambassador for our beautiful region. This watch is easy to read and wear, while its design reminds me of mechanical precision, endurance and efficiency. I also wear a Jaeger-LeCoultre Reverso Squadra World that is sleek, discreet and very useful when I travel the world for the Bocuse brand.
As the festive season approaches, do you have a particular wish or dream model?
Just one? There are so many wonderful watches in Switzerland! I love the Patek Philippe Aquanaut with the khaki green strap: it displays the simplicity of excellence, it's timeless, discreet and perfect. Nor should I forget to mention the Rolex Perpetual 1908, with its dial featuring a guilloché rice-grain motif along with its refined, understated design: a true marvel. With our upcoming opening in Abu Dhabi, I hope that the 'stars' will align on all levels.
